Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla seeds
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tbsp flour (for coating blueberries)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix melted butter, eggs, buttermilk, and vanilla seeds.
  4. Gradually combine wet and dry ingredients, stirring until just combined (do not overmix).
  5. Toss blueberries in 1 tbsp flour, then gently fold them into the batter.
  6. Fill each muffin cup ¾ full with batter.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add 1 tbsp lemon zest. If using frozen blueberries, do not thaw before adding them to the batter.
