- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 1 tsp vanilla seeds
- 1 1/2 cups fresh or frozen blueberries
- 1 tbsp flour (for coating blueberries)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix melted butter, eggs, buttermilk, and vanilla seeds.
- Gradually combine wet and dry ingredients, stirring until just combined (do not overmix).
- Toss blueberries in 1 tbsp flour, then gently fold them into the batter.
- Fill each muffin cup ¾ full with batter.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
For extra flavor, add 1 tbsp lemon zest. If using frozen blueberries, do not thaw before adding them to the batter.
